The FDA has updated the classification of a recent tomato sauce recall to a Grade II risk level as of July 11, 2024. Hudson Harvest Wholesale of Germantown, New York, voluntarily recalled its Tomato Basil Sauce on June 17 due to concerns that the product might be under-processed. This recall impacts several batches distributed across New York, Massachusetts, and Connecticut in May and June 2024.
Under-processing in food manufacturing can lead to the presence of spoilage organisms or pathogens, posing significant health risks to consumers. The FDA’s website explains that spoilage is typically caused by the growth of microorganisms following leakage or under-processing. Leakage can occur from defects in cans, punctures, or rough handling, and sometimes contaminated cooling water can introduce bacteria into the food through pinholes or poor seams.
Pathogenic bacteria such as Clostridium perfringens, commonly found in meat and poultry spoilage, and Bacillus cereus, which often spoils milk and cream, can cause serious health consequences. These bacteria thrive in conditions known as the Danger Zone, which ranges from 40 to 140°F. If food is stored in this temperature range, these organisms can multiply rapidly and produce dangerous toxins, even if the food is later cooked to a safe internal temperature.
The FDA advises that food safety is paramount, emphasizing the need to keep cold food at or below 40°F and hot food at or above 140°F to prevent the growth of harmful bacteria. The affected product, Hudson Harvest Tomato Basil Sauce, has been reported to show signs of swelling, leaking, or bursting jars, which are indicators of potential under-processing and spoilage.

Consumers are urged to check their pantries and dispose of any sauce from the affected batches immediately, regardless of whether the product appears spoiled. The FDA’s classification of this recall as Class II indicates that while the probability of serious adverse health consequences is remote, the product could still cause temporary or medically reversible adverse health effects.
